Pasta is one of the world’s most loved foods. From spaghetti in Italy and macaroni cheese in North America to pasta dishes enjoyed across Australia, Europe and beyond, it has become a truly international staple. Affordable, versatile and satisfying, pasta has fed families for centuries. Yet despite its long history, this old favourite continues to evolve.
Recent research has added to the evidence that pasta can be part of a healthy dietary pattern, but perhaps the most interesting story isn’t what happens in the laboratory. It’s what has happened in the pasta aisle. Today’s consumers can choose from traditional durum wheat pasta, wholegrain varieties, gluten-free options and innovative products made with legumes such as chickpeas, lentils and peas. More than an Italian icon
Although pasta is closely associated with Italy, its story began much earlier. Historians believe noodles and pasta-like foods were eaten in parts of Asia and the Mediterranean thousands of years ago. What Italy did exceptionally well was refine pasta-making into an art form, creating the dried durum wheat pasta that became famous worldwide.
Traditional pasta is made from durum wheat, a hard variety of wheat rich in protein and well-suited to producing firm, resilient pasta. In its simplest form, dried pasta contains just two ingredients: durum wheat semolina and water. That’s refreshingly straightforward in an era when food labels can sometimes be long and complicated.
The secret behind pasta’s low GI
Many people are surprised to learn that pasta generally has a low Glycemic Index (GI), particularly when cooked al dente (an Italian phrase meaning to the tooth, or firm but tender).
The reason isn’t simply the type of wheat used. During mixing, extrusion and drying, the starch becomes trapped within a dense protein-starch network. This physical structure slows digestion, meaning the starch breaks down to glucose more slowly in the small intestine, and therefore glucose enters the bloodstream more gradually than it does from many other processed grain foods.
This makes pasta something of a nutritional paradox. Although it’s often lumped together with “white carbs”, its blood glucose response is typically quite different from foods such as white bread, potato or rice.
Not all pasta is created equal, however. Some gluten-free varieties made from rice, corn or other starch-rich flours may have a higher GI. If blood glucose management is important to you, it’s worth checking the ingredients of gluten-free pasta and, where available, the GI rating.

The pasta aisle has undergone a quiet revolution.
Wholegrain pasta is now widely available, providing more fibre and a slightly nuttier flavour. Gluten-free varieties have improved dramatically in texture and taste, making them a practical option for people with coeliac disease, gluten or wheat intolerance.

Simple ingredients, endless possibilities
Pasta’s nutritional value doesn’t come solely from the pasta itself. One of its greatest strengths is its ability to bring other healthy foods to the table.

Pasta salad gets a gut-health upgrade
Here’s another trick up pasta’s sleeve. When cooked pasta is cooled, some of its starch is transformed into resistant starch. As the name suggests, resistant starch resists digestion in the small intestine and travels to the large intestine, where it can be fermented by beneficial gut microbes. This process produces short-chain fatty acids that support gut health.
So, if you enjoy pasta salad, you’re not just enjoying a convenient lunch. You’re also giving your gut microbiome something to smile about.
